Yesterday was my 36th birthday and I was struck with an idea. To start writing my recipe blog again and cook home cooked meals almost daily.
I have a routine down with with my daughter, baby Katie. It did take a month of being home after she was released on March 2, 2012.
Her hospital stay was three months long.
*She was born on Dec. 19, 2011 ten weeks early, due date Feb. 27, 2012. She was three pounds one ounce. Today she’s nine pounds thirteen ounces 🙂 April nineteenth will be her four-month-old birthday 🙂 She’s so healthy and we are so blessed.
As a family we want to stay healthy and the blog will help us and hopefully will help others.

I will write about recipes from my huge cookbook collection.
You’ll be able to find these recipes if you buy the books, or magazines or check them out at the library. I will also keep you current by posting about brand new foodie magazines and just reference their pages, and websites so you can go and check them out for yourself :).
Then of course there are some recipe websites online that I’ll mention, too.
The recipes that I’ll share will be taste tested and the goal is affordable gourmet food. Basically food that tastes really yummy, some of it is healthy and some of it you just can’t live without 🙂
Inspiration for starting up this blog again:
It all came to fruition when I was invited to my friend’s home the Shays, Mike, Chris and Annie.
I was treated to a wonderful birthday dinner yesterday.
Mike, who was also the chef, had asked me what I would like for a birthday dinner menu. I said I was craving fish, veggies and something to go with the meal, surprise me.
Mike made breaded and baked fish. He said it was all microwaveable and really easy to cook. It tasted fantastic, much better than Red Lobster.
We also had white rice, broccoli, carrots and corn. Angel food cake and berries, a dash of whipped cream for dessert. Overall it was a healthy dinner. (I know corn and white rice have better substitutes, but sometimes it’s ok to throw those in as your carbs).

My family, mom Diane, hubby Don, all have a goal to eat healthier and to exercise more. We’re achieving that goal every day. We’re also using advice and assistance from my brother Erik and his wife, Katie, as well as our personal trainers, medical doctors, public health nurses etc.
Katie and Erik were here from New York City last week.
This was Aunt Kate and Uncle Erik’s first time to meet their niece and baby Katie was the center of attention 🙂
In 2010 Kate and Erik bought a cookbook for my mother. The cookbook was collecting dust at my mom’s house.
It was about healthy eating and cooking what you crave. (I’ll add the name of the book soon)
Together Erik and Kate showed my mom their favorite recipes and how to add even healthier things to make those recipes taste fantastic and still remain just as healthy.
Now my mom is eager to cook these recipes and so am I.
I have many cookbooks and recipes that are collecting dust, too. My own personal goal is to cook through my cookbooks, because currently I never use them even though I love having them.
Looking back to my time between 1999 to March 4, 2011 …
.I never had time to cook meals at home very often. I was working at a stressful full-time job with an atmosphere that resembled that movie “The Office,” adding some cruel in there. I loved the job itself, which is why I stayed for almost 12 years.
During that time, thoguh, I stuck my cooking in a very tiny box, (poor hubby). I cooked only the boring basics, chili, hamburger, tacos, grilled cheese, chicken with Stove Top dressing, boring and sometimes not so healthy. Well, we did add veggies to that, but not to a nutritionist’s liking.
We also ate frozen dinners, Hamburger Helper, Kraft Mac’N Cheese and on . We ate out where you find unhealthy large restaurant portions, full of carbs and calories. As you know eating at fast food and chain restaraunts adds up fast.
Getting on the exercise bandwagon and big permanant lifestyle change as a family:
While Erik and Kate were here we were enjoying our spring weather in the 70s. We walked a lot with baby in an Infantino carrier, mom, Kate, Erik, Don and I.
We walk as a family outdoors and in gyms. Katie and Erik go to the gym and walk miles and miles in New York City
Mom continues with a personal trainer and Erik and Katie continue their fit lifestyle.
I’m recovering from an emergency c-section by walking a lot on a treadmill at the gym and walking outside with family and of course my baby Katie 🙂
I’m also going to start swimming and playing golf or tennis this summer, I haven’t yet decided which one. I was cleared today by my OBGYN though to do either and I’m very excited 🙂 In the fall my OBGYN said I can get back into dancing.
Don plays basketball and softball on Sierra Trading Post sponsored teams. He also works out at the gym, eats my healthy food, and goes for family walks.
